Sweet and Sour Pork (Slow Cooker)

- 2 lbs pork shoulder or butt, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 yellow onion, cut into chunks
- 1 can (20 oz) pineapple chunks in juice (reserve juice)
- 3 cloves garlic, minced
- Sauce
- Reserved pineapple juice (~¾ cup)
- ⅓ cup rice vinegar or apple cider vinegar
- ¼ cup brown sugar
- 3 tablespoons ketchup
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 1 teaspoon ginger, minced or grated
Method
- 1. Place cubed pork in the slow cooker.
- 2. Whisk all sauce ingredients until cornstarch is dissolved. Pour over pork and stir to coat.
- 3. Cover and cook on LOW 6–7 hours or HIGH 3–4 hours.
- 4. About 30 minutes before serving, add bell peppers, onion, and pineapple chunks.
- 5. Continue cooking 30 minutes until vegetables are tender-crisp.
- 6. For thicker sauce, mix 1 Tbsp cornstarch with 2 Tbsp cold water, stir in, and cook on HIGH 15 more minutes.
- 7. Serve over steamed rice.
